What Exactly Is a Natural Flavor Extract?

Our natural extracts are water-soluble and made in a base of natural ethyl alcohol. These clear, food-grade flavors are ideal for beverages, dairy, and any application where clarity matters. They’re also vegan, gluten-free, and Kosher. Comparable in strength to our concentrates, our extracts are versatile but we always recommend small-scale testing to determine optimal dosage for your application.

Extracts vs. Concentrates: Which Should You Use?

Both options are all-natural and water-soluble. The key difference? Clarity and heat stability.

  • Extracts are typically clear*, making them perfect for transparent products like sparkling waters or syrups. Flavor extracts that are in an alcohol base will affect freezing point of your recipe.
  • Concentrates have a cloudy appearance and are more heat stable, making them a better fit for baking or high-heat processing.

*We label any exceptions if a specific extract is not clear (you’ll see that noted on the product page).

How Much Should You Use?

We suggest starting at 0.25% by weight (up to 1%, depending on the formula).

Here’s a quick guide:

  • For baked goods: Add ~10% more to compensate for flavor loss during baking.
  • For frozen products: Air incorporation may dilute flavor, please test and adjust as needed.
